Lamb Pita Sandwiches with Tzatziki
Ingredients
- Greek Yogurt
- Cucumber, divided - half grated, half sliced thin
- Mint or Dill, minced
- Garlic, minced
- Salt
- Ground Lamb
- Cinnamon
- Pepper
- Vegetable Oil
- Pita Bread
- Romaine Lettuce Hearts, slice thin
- Tomato, sliced thin
Steps
- Combine yogurt, grated cucumber, mint, garlic, and salt in a bowl. Cover and refrigerate until ready to serve. Break up ground lamb into small pieces in a bowl and add cinnamon, pepper, garlic, and salt. Lightly knead with hands until combined. Pinch off and shape mixture into 1/2 inch thick patties.
- Heat oil in 12 inch nonstick skillet over medium-high heat until just smoking. Add patties and cook until well browned on first side, about 4 minutes. Flip patties, reduce heat to medium, and cook until well browned on second side and tender throughout, about 4 minutes. Transfer to paper towel lined plate.
- Cut top 2 inches from pitas, discard tops or reseerve for other use. Place pitas on plate, cover, and microwave until warm, about 30 seconds. Spread half of tzatziki inside each pita, then fill with lettuce, sliced cucumber, tomato, and lamb patties. Serve.
